I have low, technically bad lighting ... and flash takes away from the pics... how do you guys do it ?

Another thing that makes all the difference is the ability to adjust shutter speed. That's a manual setting though and most point and shoots don't have it. My old cybershot did, but my Panasonic Lumix doesn't.

I notice I can change some settings and set a manual preset. Can you help me understand what this does. I may just not be bringing my P6000 to its limits.

Just held up some clear plastic in front of the lens

Posterboard for backdrops, you can also use fabric but with posterboard it's much easier to get a smooth curved backdrop which is essential for that non-horizon-line look.

Most of the Canon point and shoots you can install https://chdk.wikia.com/wiki/CHDK which will allow you to controll a lot more of the camera including shutter speed.
