Really hoping that Gandalf the Grey will be the next release after Thorin and Bilbo.

On a side note, if you're reading this Asmus...Please make Gandalf's hat blue and not the same grey as his robes. The official prop hat color, according to Weta is "Natural Blue/Grey." Tolkien himself describes Gandalf's hat as blue too.

Yes. Cut the beard with scissors leaving a bit just below chin level then apply the hair on top of the sculpted beard. Here’s one I did for reference...
