Man, this is such a tough question and one related to personal taste.

I pretty much love anything by John Williams, Elmer Bernstein, Alfred Newman, Alen Menken, Howard Shore, Danny Elfman, Klaus Badelt, Thomas Newton Howard, Hans Zimmer, James Horner, the list goes on.

As for me, I was always a fan of:

Star Wars (obviously)
Superman
Harry Potter Films (The ones done by Williams, the other are only decent)
Pirates of the Caribbean (first one I enjoy the most)
Jurassic Park
The Godfather
Too many to name
