If you liked Bebop try Samurai Champloo, as others have mentioned. It's done by the same people.

The only other ones that people mentioned that I think really hold up to people who don't watch a lot of anime would be Evangelion and Kenshin. The Rebuild Evangelion movies are easier to get into I think.

Welcome to the rabbit hole though, there's a ton of different stuff out there to sate anyone's taste.
