I have this on flexpay, but I want it sooner than late December. Would Sideshow let me pay the rest when it arrives in their warehouse and ship it then or do I have to ride the flexpay out?

Yes. You can pay the balance when it arrives at the warehouse and they begin shipping. ~Nov. 14 call SS customer service.

I can sit back and patiently wait for figures like this all the way from promo to around two weeks' out from the release date. But that last couple of weeks is a killer

I agree with both Toylion and Maglor. HOWEVER when you hold both SS and HT Indy in your hands, already you can tell how solid the HT body is making the overall figure of Indy fantastic compared to the Pinocchio body of SSC.
