I've been comtemplating doing the same thing. I think finding a accurate version of the flak vest will be the hardest part to source. DML makes plenty of vests that come close, but will definately need to be customized.

Off the top of my head:
Zacca makes the 4 barrel rocket launcher.
The Uzi wil is somewhat hard to find and can be costly. HT made one that came with the BD T-800 figure, and SSC Snake Eyes figure.
Shotgun DML makes plenty of these.
M60E3 easy to find and cheap, some even come with real metal ammo links.
Claymores are hard to find. They came with a rare HT Vietnam figure.
Grenades Soldier Story makes the best.
