Anime! What are good series to watch?

I'm not an avid anime guy per se. I'm not a big fan of the over the top cartoon goofiness that the japanese seem to love. However I just finished watching all of Claymore on Netflix and absolutely loved it. Big fan of the gundam series, outlaw star and cowboy beebop. Anything else I should be watching?

Hellsing for sure, I'd check out appleseed if you haven't seen it

Death Note - Mystery thriller centering on a notebook that can kill people whose name are written on it.

Elfen Lied - Quite violent but terrific story.

Gantz - Crazy sprinkled with violence.

I'm not an anime guy, but Neon Genesis: Evangelion is one of my favorite "shows" ever. There is enough weirdness where you can watch it drinking with a bunch of friends, but it's also a sublime work of art. It's goofy, yet profound and moving.

If you mean japanese animation then I suggest YAIBA. Awesome episodes, full of wacky characters and overall, a great series! AND I LAAAAAAAAAV THE ENDING THEME!
