Hi Old Grandpa, firstly, sorry I don't have a spare Saturday Toys prison coveralls... but, I think the yellow ones are still available (on the evil bay at least) and can be stripped and re-dyed, e.g. https://www.sideshowcollectors.com/forums/showthread.php?137445-Dying-Saturday-Toys-Yellow-Coveralls.
Yellow to orange or brown should be fairly straightforward. You might need to use some acrylic paint on the stitching after re-dying is all.
