You and the poster above named a bunch of the good shows already but if I had to add a few to the list, I'd also recommend:

Spartacus
Lost (end sucks but early seasons are very good)
Smallville seasons 2, 3, 5, 9, 10 and parts of season 1 & 6 (if u like superman, watch the arrow tv show and/or can handle cw cheese)
Big Bang Theory
Firefly
The Shield

Mini series:

Band of Brothers
The Bible
Hatfields & McCoys
Planet Earth


Newer shows currently on:

Hannibal
Bates Motel
Arrow (if u can handle cw cheese and stupid side arcs)

If u chose to watch Spartacus seasons 1-3 are all you need. Gods of the arena was a filler season that isn't really necessary to watch for full enjoyment. If you like the characters of Gannicus, Onomeus, Asher, batiatus then its worth watching.

Don't start with God of the Arena!!! DON'T DO IT!!!!!!

Blood and Sand!!!!!!!!

Gods of the Arena is made better because you already know the characters from season one. And Like I said Gods of the Arena Spoils the Ending of season one right off the bat.

Watch it after season one and before season 2 like it is meant to be :)

Just because it's a prequel that does not mean you start with it. The first min gives away the ending to the first season!!!!

The order they aired in was

Blood and Sand
Gods of the Arena (prequel)
Vengeance
War of the Damned

Don't let the first couple of episodes put you off, once it gets going, it never lets go.

You will like Spartacus a lot. But I must warn you, once u start watching it, it will be hard to stop, you will be compelled to watch episode after episode!!! Before you know it 5 hours have passed by and your only a quarter thru season 1

Thats cool, we haven't done that in years, actually since we bought the seasons of Oz, we'd watch like 6 episodes in a row and just waste a night doing that.

Just ordered season one of Blood and Sand, you guys are just too overwhelmingly passionate about it for me to pass up.

Think I'm going to grab Deadwood as well, I need me some Olyphant during the Justified downtime.

Absolutely Spartacus. One of the greatest shows to grace the television screen.

A lot of people write it off immediately for the intense gore and sexual content, but there's so much more to the show.

The music, the armor designs, the casting & characters, etc. It's really fantastic.

Jupiter's **** I miss it already. :(

Can't recommend Justified highly enough. Especially if you like Olyphant.

24 is the most compelling action-adventure series ever done. Its like an 8-season Die Hard movie.

I'll add Prison Break was very good...similar to the show Heroes, it goes bad after the first couple of seasons but it's still worth watching those first two...

Homeland another GREAT show....

And Mad Men although this is kind of a polarizing show...some love it, others find it boring but I think it's great, very philosophical and character driven...I say if you decide to start watching it, watch the first season and if you like it then you'll like the rest of the seasons, if not then it's just more of the same and you can pass but at least watch the first season in full before deciding...
