What is the massive crab-like sculpture coming out of Boba Fett's helmet??

Most likely just a stand alone one of a kind art piece, a few years ago they had a setup of customized stormtroopers one was in an ice cream etc.
 
I think that display would have been cooler if they skipped the crab thing and just had a weathered Fett helmet submerged in the sand.
 
Well... the Sarlacc eventually has kids, right!? So that's why it eats people with their clothes on, so its kids can have clothes when they grow up.

But back to on topic, I realllllyyyy like the crab thing and would love to have one. Its just so unique! Hope they dont go for an arm and a leg cause I wanna score one!
